Loaded Gingerbread Popcorn with Caramelised Spiced Nuts, Chocolate Tahini Sauce and Strawberries (In the Microwave!)


Besides from this Loaded Gingerbread Popcorn with Caramelised Spiced Nuts, Chocolate Tahini Sauce and Strawberries, I can’t actually remember the last time I had popcorn. Crazy right?


I guess I just thought that popcorn was boring – the only popcorn I’d ever had was plain, buttered, caramel popcorn from a snack bag that my friend had sneakily shared with me at school from her lunchbox, and popcorn covered in icing sugar from my friend’s 6th birthday. But apart from that, popcorn was just plain old boring.

Well, spending all that time without popcorn was a HUGE mistake. Especially when it’s LOADED GINGERBREAD POPCORN!

I’ve tried loaded fries before, I have loaded smoothie bowls every day sometimes, I’ve made loaded salads, but never had I eaten loaded popcorn. Until a few days ago when I was lying in bed and the idea of gingerbread-spice-smothered popcorn topped with caramelised spiced nuts, chocolate tahini sauce, strawberries, raw quinoa, black sesame seeds and bright pink dianthus flowers parked up in my mind. I whipped out my notebook and scribbled down the idea, and the next thing I new, lunchtime was approaching and so was the popcorn.

I’ve made this recipe so that the only cooking appliance you need is the microwave (because microwave = instant food)! I have to say, I was a little scared that my popcorn wouldn’t pop in the microwave, but after a couple minutes there were delightful popping sounds ricocheting around the kitchen! Just a note: make sure you use a bowl big enough to contain all the popped popcorn (popcorn grows SO MUCH (!!!) from kernel to popcorn)!



Another thing, you NEED to make sure that the plate covering your bowl when it goes in the microwave fits snugly – otherwise air will escape and your popcorn will not be popped to satisfaction.

As for the nuts, you only need to throw them in a bowl with the rest of the ingredients and let the microwave do all the work! Then, as they cool, you’ll end up with crispy, caramelised nuts! How awesome is that?


Then you just top it all off with chocolate tahini sauce (which, by the way, only needs a little bowl, a whisk, tahini, cocoa powder and maple syrup), strawberries and whatever else you like.


All in all, this recipe only takes a few minutes to make! It’s the perfect winter treat for when it’s cold and grey outside, or, if you’re with me down in the southern hemisphere – summer is also a great time to chow down on popcorn!Β πŸ˜‰


Loaded Gingerbread Popcorn with Caramelised Spiced Nuts, Chocolate Tahini Sauce and Strawberries (In the Microwave!)

  • ¼ cup popcorn kernels
  • 1 tbsp melted coconut oil
Gingerbread Coating
  • 1 tsp ginger
  • 1 tsp cinnamon
  • ⅛ tsp cloves
  • pinch nutmeg
  • pinch white pepper
  • pinch allspice
  • 1 tbsp maple syrup
  • 1 tsp melted coconut oil
Caramelised Spiced Nuts
  • 2 tbsp cashews
  • 2 tbsp almonds
  • 2 tbsp sunflower seeds
  • 2 tbsp peanuts
  • 2 tbsp walnuts
  • 1 tbsp melted coconut oil
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
Chocolate Tahini Sauce
  • 2 tbsp tahini
  • 2 tbsp maple syrup
  • 2 tbsp cocoa powder
To Serve
  • ½ cup strawberries, quartered
  • Other toppings of choice
  1. In a large bowl, place the popcorn kernels and melted coconut oil. Cover with a tight-fitting lid or plate and microwave on high for 5 minutes.
  2. Meanwhile, mix all ingredients for the Gingerbread Coating in a small bowl.
  3. When the popcorn has finished popping, pour over the Gingerbread Coating and stir to distribute.
  4. In a medium bowl, combine all ingredients for the Caramelised Spiced Nuts and microwave on high for 4 minutes, stirring halfway through.
  5. Combine all ingredients for the Chocolate Tahini Sauce.
  6. Divide the popcorn between two bowls, top with Caramelised Spiced Nuts, Chocolate Tahini Sauce, Strawberries and any other toppings of choice.
