🍦How good is homemade dairy-free ice cream? I

🍦How good is homemade dairy-free ice cream? I always have some in the freezer - I love getting creative with flavours and mix-ins. This one is smooth and velvety, similar to a sorbet, and comes together in minutes. It blends frozen mango and some pantry staples with @sogoodanz So Good Extra Creamy Oat Milk.

This oat milk is, as the name suggests, super creamy and versatile. I love it in my morning latte, and it's also great for pasta sauces (you may have seen my Creamy Mushroom, Lemon & Herb Pasta recipe I recently posted), baking - and ice cream of course!

This ice cream is laced with crunchy oat clusters and chewy dried mango pieces for added crunch and chew. Those oat clusters are obsession material… we've got a container of them on the bench because they're just so addictive to munch on!

🍦MANGO OAT CRUNCH ICE CREAM🍦

Serves 8

OAT CRUNCH CLUSTERS

60ml maple syrup
50g coconut oil, melted
3/4 tsp salt
1/2 tsp vanilla extract
125g rolled oats

MANGO ICE CREAM

350g frozen mango chunks
300ml @sogoodanz So Good Extra Creamy Oat Milk
75ml maple syrup
1 tsp lemon juice
1/2 tsp vanilla extract
1/4 tsp salt

25g dried mango, chopped

Preheat oven to 160°C fan bake. Line a baking tray with baking paper.

Whisk together the coconut oil, maple syrup, vanilla extract and salt in a medium bowl. Add the oats and stir to combine.

Spread out on your prepared baking tray. Bake for 10 minutes, until golden brown and fragrant. Remove from the oven and allow to cool completely, before breaking into clusters.

When the clusters have cooled completely, add all ingredients for the ice cream, except for the dried mango, to a blender or food processor. Blend until thick and smooth, stopping to scrape down the sides as necessary.

Transfer to a large bowl and add the oat clusters (save some for snacking or sprinkling on top!) and dried mango. Fold through, and serve immediately.

I feel like I've been eating pink everything recently... not complaining about it🤷‍♀️.

My friend Lyn @stillnothinginit has just written and self-published a cookbook! I really wanted to make one of her recipes and do a fun little shoot, and her recipe for 'Raw Raspberry, Coconut & Chocolate Slice' caught my attention.

So, I whipped up the recipe over the weekend, and did a fun photoshoot. I've styled the slice to suit her classic rustic style (she literally runs a shop called Rustic Stuff😅).

So yum. Her book is called 'Still Nothing In It, So Let's Eat!' - as the name may suggest, all of her recipes are free from gluten, wheat, refined sugar, lactose, eggs, honey, soy, oats and barley, according to her dietary needs... so everything in the book can suit a variety of diets. ☀️Magical raw kingfish with tomato and basil. This was a meal that spanned hours; as I slowly grazed away at dishes and wines, reading my book sometimes but mostly people-watching (K Road is always entertaining), and basking in the early evening sunlight from my cosy window seat. I love @flor_366krd!

I had:
🦪Raw Te Matuku oyster with mignonette
🍞Housemade sourdough with ricotta & fermented honey + aged butter
🐟Raw kingfish with tomato and basil
🦪Warmed Te Matuku oyster with sunflower seeds
🍈Melon, cucumber and peanut salad
🌱Courgette with almond and geranium
🍚Edamame 'congee'
🦆Charred duck breast with greens
🍦Marigold ice cream

It's so so hard to pick a favourite...but the edamame congee was pretty unbeatable. Especially with that punchy, tangy toasted yeast on top. The kingfish was sooo fresh, and I pretty much drank the almond sauce that came with the courgette. The warmed oyster was incredible, and I was so sad to have it gone in one mouthful. But the marigold ice cream... whoa. Silky, almost savoury and impossibly creamy.

🍝A perfect plate of mafaldine, its ruffles holding a gloriously rich and glossy pork shoulder and red pepper ragu.
I loooved having a bit of @bianca.akl at home in Taupo, thanks to their take-home pasta kits (yes, my car smelled like meat and foccacia during the 4 hour trip home... I wasn't complaining).
.
Bianca's pasta kits are a matter of heating and eating, and adding a little butter to bring it all together. And while it can't compare to the experience of dining in that romantic little restaurant, cooking and eating their fresh pasta at home is such a comfort. I just had to set up a little photoshoot, to capture my little serving of Bianca at home💁‍♀️

You can find their pasta kits in the fridge, in the deli part of the restaurant... and while you're at it, don't walk out without the foccaccia.👌

Growing up, I always remember mum's "half sandwich

Growing up, I always remember mum's "half sandwiches" she'd put in our lunchboxes: just one slice of wholegrain bread; half spread with peanut butter and jam, and the other half folded over top. 😅

These Peanut Cookies with White Chocolate and Raspberry are reminiscent of the childhood staple; in a much more elevated form. If peanut butter and jam reminds you of your mum, she'll surely appreciate a batch of these for Mother's Day tomorrow!

I've just put the recipe up on my website, which you can find through the link in my bio. Customise the toppings to suit your mum's favourite flavours, or use your favourite nut/seed butter to suit. They are so easy to make your own.

It's been a while... but my newest *limited edition* cake hits @thecozycornertaupo's cabinet tomorrow!

Designed with mums in mind, this Black Forest & Cashew Cream Cake is creamy, velvety and delicate, with the richness of dark chocolate and crunch of almonds. I love the little layer of raspberry chia jam on top, and of course the dark chocolate rubble topping. The best part, though: that silky smooth cashew cream filling. YUM.

(By the way, it's actually vegan, gluten free and refined sugar free too).

Treat mum to a slice and coffee this weekend, or grab a takeaway piece to surprise her at home. I'm only making one batch... so once it's gone, it's gone!

👋Hi! It's about time I did a little intro... I'm Olivia, the human behind all the food. Growing up, being in the kitchen was normal to me as brushing my hair or learning my times tables - it was something I always did, and I was always deeply passionate about it.

After starting this page as a passion project while in college, That Green Olive has grown into a business I absolutely love - I'm really so grateful to be able to have a job where I can create, cook, capture what I'm truly passionate about. I've worked with a variety of awesome businesses run by passionate people, tasted some inspiring and thought-provoking food, and developed new skills in multiple avenues. I'm so excited to see where this business can lead, and what impact I can make on NZ's growing food scene.

Molten yolks and oozy cheese are some of favourite things. My Cheesy Smoked Salmon, Spinach & Miso Baked Eggs is another sure thing on that list!

I looove the salty tang from the miso - it's the perfect complement for @regalsalmonnz Natural Hot Smoked Salmon - and the ginger and spring onion add a vibrancy that cuts through all the richness.
.
Serve with sourdough for dipping (you'll wanna soak up all that flavourful sauce)!

🍳CHEESY SMOKED SALMON, SPINACH & MISO BAKED EGGS🍳
Serves 2
.
•50g butter
•1 large spring onion (30g), both white and green parts, finely sliced
•3 cloves garlic, finely chopped
•5g fresh ginger, finely chopped
•1 tsp ground coriander
•300g baby spinach, washed
•125g grated cheddar cheese, grated
•2 tsp miso paste
•2 tbsp full cream
•15g fresh coriander, finely chopped (about 2-3 tbsp), plus extra to garnish
•1 tsp white vinegar
•1/4 tsp salt
•1/4 tsp chilli flakes, plus extra to garnish
•2 eggs
•½x125g packet Regal Salmon Natural Hot Smoked Salmon, flesh roughly torn
Buttered sourdough, to serve
.
1. Preheat oven to 160°C fan forced/180°C standard. Lightly grease a small baking dish.
2. Place the butter in a large saucepan over medium heat. When melted, add the spring onion, garlic, ginger and ground coriander. Cook gently for 7-8 minutes, stirring often, until fragrant and golden brown.
3. Add the spinach and cook for 4-5 minutes until wilted, before adding 100g of the grated cheese (reserve the rest for topping) and the miso. Cook, stirring, until the cheese is melted and the mixture comes to a bubble.
4. Remove from heat and stir through the cream, coriander, vinegar, chilli, salt and a good season of pepper.
5. Transfer to the prepared dish and dot over the salmon pieces. Use a spoon to make two indentations in the top, and crack an egg into each. Sprinkle over the reserved 25g grated cheese.
6. Bake for 10-12 minutes, until the cheese is golden brown and the eggs are cooked to your liking. Garnish with extra fresh coriander and chilli flakes.
7. Serve immediately, with sourdough for dipping.

🍗This is THE fried chicken sandwich you can't miss out on. This beauty from @rhu_akl is by far the best fried chicken sandwich I've had - the chicken was impossibly juicy, crisp yet light (with a little spice and a delicate pungency), topped with a super crisp, sweet slaw with dill and pickles, and of course their famously soft milk bread. Despite its sheer size, it doesn't feel at all heavy. It really is a pleasure to eat.

The rest of Rhu's menu is impressive - swipe to see what else I ate. Their honey toast is my favourite brunch menu item I've eaten in a long time; the toast really resembled honeycomb with its sweet and buttery crisp character - and their charred avocado toast with kimchi was an addictive combo. The omelette had a gorgeous silky smoothness and a velvety goats cheese filling.

The burgers at @paulystaupo are ginormous - but regardless, it's still so sad when you've taken the last bite and have to face there's none left.
.
After our photoshoot was done, I got to try three of their fully loaded burgers (BBC (BBQ Bacon Cheeseburger), Pulled Pork and Fried Chicken burger), plus their real saucy loaded fries. I really love how generous they were with that creamy dill slaw, and the fillings were all really juicy and flavourful.

💚I always feel so special when restaurants look after me as a solo diner. At @forest.akl (which used to be on Symonds Street... this was my first time at their new artsy place on Dominion Road) not only was I reserved a corner table for the cosiest vibes, but the lovely staff suggested I order half portions of multiple things, after expressing that I literally wanted the whole menu. Those half portions ended up being more like full portions... but since the food is actually pretty light, you'll find you can eat a lot more of it!
.
The reason I compulsively booked a table was the return of their fried feijoa dessert. I so badly wanted to try it last year, but never made it to Auckland during the fleeting season it was available. I could NOT afford to miss it this time. It definitely lived up to my high expectations, soo crispy, yet hot and silky inside - rolled in a sweet and tart fejioa skin sherbert, and the homiest sticky ginger cake. I loooved the very generous pool of earl grey custard.

🌽Witloof taco, corn nugget, chilli lime mayo, pickles
🍠Roasted purple kumara, Marmite cream, capery peas, paprika, rosemary
🍯Deep fried halloumi, celery honey, pickled shiitake, kohlrabi
🍩Whole feijoa fried like a doughnut, feijoa skin sherbert, ginger cake, earl grey custard

My tip: ORDER THE FRIED FEIJOA. And the kumara dish - that Marmite cream was just awesome with those briny capery peas!!

🍯Sourdough, butter, Manuka honey. When you've got high quality ingredients to work with, a simple combination can be something really special!

I used @manuka_emporium
MGO 100+ here (although with their offering of jars ranging in MGO levels, you can choose how fancy you want your toast to be👸), spread thick on @embra.nz's famously good sourdough. This bread is beautifully spongey and tangy, with a deeply sweet and crunchy crust. I love how the honey drips and gathers in all its holes and crevices.

🦪Seems like summer has returned for a brief moment! The warmth and sunshine means oysters and a cold drink are all the more enticing.

These plates and tipples are all at Tauranga's @jaisabenbarbistro. Its waterfront location is perfect for soaking up that Vitamin D and enjoying the beautiful sea view - you can sit in the main restaurant, in their outdoor porch or upstairs overlooking The Strand (the perfect mix of people watching and sea gazing)!

🎉Celebrating a milestone! 🎉 Photographing Linda Duncan (@theworldseasiestrecipes') newest cookbook was such a privilege.

Over several weeks last year I invaded Linda's hallway with mountains of equipment, and would turn up each day to a smorgasbord of food ready to shoot. With Metallica blasting (and fuelling the energy), I'd style and shoot each recipe at my table, while Linda cooked and worked through and endless stream of dishes. There were many learning experiences, lightbulb moments and trips to the dairy - and it was such a rewarding feeling sending off the completed gallery of images. Even more rewarding was seeing the book in physical form!

It was such an amazing experience working alongside Linda. This is the 4th volume of her The World's Easiest Recipes cookbooks - so if you've got the first three, here's a new one to add to your collection...
